Fresh, Ripe, Dried & Smoked Peppers: How One Chile Can Become Something Completely Different
One of the most useful lessons in our entire Pepper Encyclopedia is that a pepper’s identity doesn’t necessarily end when it leaves the plant.
Ripening, drying, roasting, and smoking can dramatically change how a chile tastes and how cooks use it.
The jalapeño is one of the easiest examples.
