It's April and beautiful here. The water is amazing. The Island is in full bloom. And the beer is always cold.

So where the heck are you? Come down NOW!


CAJUN SHRIMP DIP RECIPE
from JOYCE CARTWRIGHT (Thanks, Joyce)

Boil 1 lb. shrimp in water with cayenne pepper - let cool -
-drain and DICE FINELY
16 oz Softened Cream Cheese
1 tablespoon HOT SAUCE (Scooter sauce would be great - your favorite)
1 tablespoon Worcestershire Sauce
Juice of 1 Lemon
3/4 cup Mayonnaise
3 Scallions (spring onions) diced fine
1/2 to 1 teaspoon Red Pepper Flakes (I would say MORE)

Add Shrimp - if too thick add more Mayo & Hot Sauce
REFRIDGERATE (Let set at least 24 hours)
Serve with Crackers or Chips

The only thing I might suggest is that you use Old Bay Seasoning when boiling the shrimp, but that's just me.

A handy guide of our sauces is presented below.


Our PEPPERS of Key West Sauces . . .

Key West Conch Cruiser Marinade was originally released as the left wing sauce in August 2004. Created in Mike's kitchen as Mike and Tom behaved like mad scientists (and drank a lot of beer), this sauce is Asian inspired with stuff like soy sauce, ginger, garlic, sesame oil and a bit of paprika and Cayenne. It can be used as a sauce or a marinade for chicken, meats and seafood. It's REALLY GOOD! So GOOD that it has won 7 National awards in the Fiery Foods industry -- including Best Wing Sauce, Best Low Carb Flavorful Wing Sauce, and . . . Best New Product!

Key West Chicken Wing Sauce, orginally released as the rite wing sauce, was introduced at the 2003 Fiery Food Challenge in Fort Worth, Texas. It won third place in the 2004 Scovie Awards in the Wing Sauce division! It's a tasty wing sauce with blue cheese and garlic.

Key West Bahama Village Jerk Sauce is a Jamaican Jerk sauce as made by Mike and Tom -- unique. And with our captured audience of taste testers from all over the world, you can be sure that it is another great sauce. It was too late for all the contests but our customers are still tasting it, loving it and buying multiple bottles of it! This is great with all your meats, poultry and hearty fish. Great on the grill and broiler.

Goin' Bananas Hot SauceOur Goin' Bananas--the Hot Sauce with A-Peel won Most Unique Hot Sauce in the 2005 Scovie Awards. It's is a medium hot sauce made with bananas, red wine vinegar, raisins, tamarinds, worcestershire sauce, honey, onions, Habaneros, Chipotles, garlic, tomato, key lime juice, brown sugar, & a little salt. Of course, it is one of our Bestsellers!

Our Peppers of Key West Hot Sauce #1 is a Louisianna-style Cayenne sauce with a hint of garlic -- great as an all around wherever-you-need-hot-sauce sauce! Peppers of Key West Hot Sauce #2 (Key West Scooter Hot Sauce) is a medium to hot Habanero sauce. Check them out soon!
