Raspberry Wasabi Chick Salad That Shouldn’t Work but Absolutely Does

Raspberry Wasabi Chick Salad

Ingredients:

  • 12 hard-boiled eggs
  • 1/3 cup mayonnaise
  • 1/4 Cup Terrapin Ridge Farm’s Raspberry Wasabi Mustard
  • 1 teaspoon garlic powder
  • 1 tablespoon salt
  • 1 carrot sliced into rings
  • 4 black olives
  • 4 sprigs of fresh dill
  • 10 oz. of your favorite leafy greens.

Instructions:

1. Slice thinly across the bottom of each hard-boiled egg so that it will stand up on its own.
2. Slice through middle of egg and gently remove yolk from all eggs.
3. Mix mayonnaise, Terrapin Ridge Farm’s Raspberry Wasabi Mustard, garlic powder, salt, and egg yolks in a bowl until smooth.
4. Place egg yolk mixture in a piping bag and fill bottom of egg white until they are ¼ inch over the brim of the egg. Top with the “lid.” Continue with remaining eggs.
5. Stamp out eyes from the olives with a straw and place on eggs.
6. Thinly cut the carrot rings “pizza style” into 6 pieces and place 2 pieces on the eggs to create the beaks of the chicks.
7. Arrange your favorite leafy green on a serving tray.
8. Nestle the eggs into the salad and serve.
