  1. Peel and grate the sweet potato into a mixing bowl.
  2. Add the flour, Catch a Fire Curry Powder, Peppers of Key West Porky Pig Pork Seasoning, and a good grind of pepper and salt to season. Mix well.
  3. Heat a little oil to medium heat in a large frypan.
  4. Squeeze handfuls of potato mixture together then flatten into a patty shape and pop in the frypan.
  5. Cook until golden brown on the bottom, flip and cook the other side until golden. Don’t be tempted to flip them too early otherwise they’ll break – let that first side get good and golden to hold them together.
  6. Serve with Terrapin Ridge Farm’s Raspberry Wasabi Mustard
