Clean and de-beard mussels. Place mussels in a large sauce pan. Pour shallot, scallions, Busha Browne’s Traditional Jerk Seasoning Rub, lemon juice and wine over the mussels. Cover with a tight lid and bring to a boil. Steam on medium heat for 4 minutes or until shells open. Shake the pan during this time to cook the mussels evenly.
