  1. In a large bowl, combine corn, onion, Catch a Fire Cajun Garlic, and Cayenne Hot Pepper Sea Salt and stir together well. Add beaten eggs and stir, then add flour. Season with pepper.
  2. In a large skillet over medium-high heat, heat Extravagonzo Roasted Garlic Culinary Oil. Using your hands, form corn mixture into small patties. (If mixture feels too thin, add more flour, one tablespoon at a time.) Cook fritters until crisp and golden, about 2 minutes, then flip and cook 2 minutes more. Transfer to a paper towel-lined plate to cool.
  3. In a small bowl, stir together mayo and Charlie’s Hard Times Hot Sauce. Serve fritters with spicy mayo.
