Pad Thai

Ingredients: for one dish

oil for frying
a small handful each of shredded carrots, shredded onions and chopped tomatoes
a raw egg, beaten
a small handful of cooked chicken or tofu
a teaspoon of minced garlic
pre-soaked, prepared rice noodles (as many as your appetite wants)
a tablespoon of Psycho Soy Sauce
2 tablespoons of water
a teaspoon of sugar
a small handful of bean sprouts
a small handful of roasted peanuts
a small handful of shredded spring onion
juice of half a lime
Sambal Oelek Ground Fresh Chili according to your taste (one-half teaspoon if you’re not sure)

Instructions:

Heat the oil and fry the carrot, onion and tomato.

Add the egg to one side of the pan, chop into pieces as it cooks and then mix into the fried vegetables.

Add the cooked chicken or tofu and garlic. Mix together well then add the Psycho Soy Sauce and water.

Add the remaining ingredients: sugar, bean sprouts, peanuts, spring onion, lime juice and Sambal Oelek Ground Fresh Chili.

Mix well and fry for one minute. Serve and sprinkle with crushed peanuts to garnish.
