Fresh, ripe bananas supply the main flavor, with honey, raisins, tamarinds, Chipotle peppers, and just a touch of habanero for good measure, making Goin' Bananas the perfect compliment to any pork dish. Our favorite use: about halfway through grilling thick cut pork chops (when they're good & sizzlin'), add a bit of this on and let it caramelize just a touch. Unlike it's spicier cousin the Jamaican jerk sauce, which is liable to catch up with you after dinner in the form of heartburn, or the next morning in the form of... (!) Well, anyway, our Key West-style jerk marinade is sweetened with mango and raisins and seasoned with nutmeg and allspice, for a mild but tasty flavor that everyone can enjoy. This sauce is the second recipe we came up with (hence the name - get it?), and our hottest to date.
