Robert Rothschild Farm Zesty Madras Curry Simmer Sauce inspires Indian masterpieces at home. Curry is a fundamental ingredient in Indian and Southeast Asian cuisine. There are may different preparations, flavors, and even colors. In fact, many regions and subregions of India have their own take on curry and those found in, say, Thai cuisine have a vastly different taste altogether. Madras Curry originates from the city and surrounding region of Madras, India. Not surprisingly, they don't call it "Madras Curry" in Madras- it's just "curry." The name was coined by British restauranteurs. Madras Curry is traditionally more sweet than savory and deeply red in color. The red color is not a function of the curry itself, but the other spices added to it. Again traditionally, the red color is achieved by adding peppers, paprika, and turmeric. At Peppers of Key West, we are big fans of Robert Rothschild Farm. They have a fantastic mix of traditional, purist, fusion, and downright creative sauces. Robert Rothschild Farm Zesty Madras Curry Simmer Sauce falls somewhere in between fusion and traditional because it uses a traditional curry and spice base, but adds some western elements to deepen and enhance the flavor. If you are a fan of Indian cuisine or have always wanted to create amazing Indian Curry dishes at home, then this is your sauce. It's best employed in a slow cooking process with really any meat that you enjoy.
