Nellie & Joe's Key West Style Mojo Criollo is an all-natural marinade and dressing that is a tangy traditional recipe for pig roasting in the islands, but don't worry, you can use it on smaller cuts of meat, too! Made with the flavors of lime and orange juice, onion and garlic, this is an excellent marinade for grilled chicken or pork. The easy way to use Nellie & Joe's Key West Style Mojo Criollo is to add it to your fajitas or simply drizzle over mixed greens for a Caribbean flare. The more time consuming, but rewarding method is to marinade your meat for a few hours and then slow cook over a smokey grill. Don't marinade it over night with this, because as the amazing BBQ master that you are, you know that the citrus in Nellie & Joe's Key West Style Mojo Criollo will actually begin to chemically cook the meat. Some may like that, but the safe thing to do is use thin pieces of meat- either cut thin as with pork or beaten down like a naughty chicken breast, and then give it a bath in a sealed ziplock bag placed in the fridge. There are times, especially during cruise season, where Peppers of Key West is busy from open to close and time to eat is scarce. That said, there's no reason to sacrifice great tasting food just because it has to be quick. There's also no reason to eat a bunch of junk either. One of our favorite fast and healthy meals at Peppers of Key West is a big 'ol fresh salad- with sliced chicken if we remember to cook it the night before- doused with Nellie & Joe's Key West Style Mojo Criollo as a dressing. It's sweat and tangy and tastes like it belongs in Key West.
