Sweet & Savory Onion Glaze is one of my favorite products, and a best seller at Peppers of Key West. This is a boutique, hand crafted product that is lovingly made one jar at a time.
Every jar of Sweet & Savory Onion Glaze starts with 15 and ¾ pounds of fresh, sweet onions. A little garlic rounds out the savory side, and then it’s mixed with apples, apple cider vinegar, and crushed red peppers for the sweet part. It gets a little tingle from some fresh jalapenos as well, but not too much—our Sweet and Savory Onion Glaze carries a rating of 1 on our heat scale, which means it has a little kick, but not too much.
If this sounds like an eclectic mix of ingredients, it is, but trust me when I tell you that they blend perfectly into a balanced and delicious concoction.
How do you use the Sweet and Savory Onion Glaze? Well, as the name implies, it’s originally intended use was as a glaze for meats—it is awesome on ham, way better than your typical honey-based glaze.
One of the things I love about running Peppers of Key West is of course living in Key West. And one of the best things about living in Key West is the fresh fish we get here. My favorite is grouper, which I like fried. And guess what? The Sweet and Savory Onion Glaze is a perfect topping for any fried fish, but particularly fried grouper. I just pour it right on the fish. It’s superb.
Here’s one final suggestion. Try mixing some Sweet and Savory Onion Glaze into mashed potatoes. Most people add milk, half and half, or even heavy cream to mashed spuds. So whatever you typically add, do it like usual except reduce the amount of liquid by a half cup or so, and then through in some of this Sweet and Savory Onion Glaze, right at the end. People will freak out—it’s really good, but a completely unique and unexpected flavor as well.
