Chili Pepper Republic Authentic Caribbean Jerk Seasoning is just that- authentic. Jerk cooking originated in Jamaica and has spread through the Caribbean. At its core, it's simply adding a dry spice rub and cooking more slowly than grilling. At it's inception, actual ground pits were used to cook the meats, but as time went on folks starting finding new, and easier, ways to achieve that same smoky flavor. Now days, the tool of choice is a barrel cooker fired by charcoal and hardwood to achieve the smoky flavor.
Sounds kind of simple, doesn't it? Rub some meat down with dry spices then cook it slow and smokey in a barrel using charcoal and hardwood- Bam! Got some Jerk! Well, the secret is in the spice and we here at Peppers of Key West get to taste a lot of Jerk seasonings. We are, after all, pretty much in the Caribbean. The folks at Chili Pepper Republic do it right with their Authentic Caribbean Jerk Seasoning. They take all the guess work out of the spice and the work that goes along with creating your own by way of trial and error. Just rub this Chili Pepper Republic Caribbean Jerk Seasoning on your pork, chicken, ribs, or fish and throw it in your barrel cooker.... what? Don't have a barrel cooker? Me neither.
No problem... it's best to use a charcoal grill in lieu of a barrel cooker. Just load all the charcoal (hardwood preferred) onto one side of your grill and place your meat on the other. It will cook more slowly and absorb more smokey goodness that way. Be sure to rotate it once in a while for an even cook. If you're using a gas grill, only light the back burner and keep the meet up front. I also suggest you get some smoking chips (real wood, not the wafers) and add them to the mix in the gas grill. So, there you have it. Caribbean Jerk Peppers of Key West (and Chili Pepper Republic) style. Remember to plan ahead, cooking this way does take a bit longer.
